Open and merge the per-variable, per-month WOA23 files.

self.filename is the directory holding the files, as with GLODAPv2Dataset. Only the objectively-analyzed *_an field is read from each file; the eight other statistical fields WOA ships alongside it (*_mn, *_dd, *_sd, …) are never touched.
